Super Cheap and Super Tasty Meal Ideas

Feeding a family isn’t cheap, and with food prices soaring all the time we thought we would give you some super cheap and super tasty meal ideas for you and your family to try.

Our first recipe is Lentil Bolognese,  I am a vegetarian and often end up cooking separate meals for myself and the family which can be costly, so this seemed like a perfect recipe that the whole family could enjoy together.  A bag of lentils cost so much less than the mince that you would usually use in a Spaghetti Bolognese so you can save yourself ££££’s and it is actually a more healthy option too!  Lentils are a great source of protein and can help to reduce cholesterol, they are super low in calories and great for your digestive health as well.

To make this delicious meal you will need the following ingredients -

  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 cloves of Garlic
  • 1 Box/jar of pasatta or two tins of chopped tomatoes whizzed up in a blender
  • Basil
  • Oregano
  • Tomato puree (1 tablespoon)
  • 150g of dried red lentils
  • Pasta

Method - 

Soften the onion and carrots in a little olive oil and add in the garlic, once they are all softened add in the lentils and cook until they are pale in colour.

Add in the oregano and the basil and pour in the chopped tomatoes.  Stir in the tomato puree and leave it all to simmer for about 45 minutes.

You might find it becomes quite think during the cooking process, if this happens just add in some boiling water if you need to during the cooking time.

 

 

 

Serve with some cooked spaghetti or whatever pasta you prefer and you have got a delicious, nutritious  and very cheap meal! I was not sure that the kids would eat this the first time I made it, but they love it as you can see from the empty plate below!

This feeds my family with a portion left over (2 adults and 2 kids).  A 500g bag of Lentils costs just over £1 and you could make this 3 times with that bag, so an amazingly cheap meal that is scrummy and healthy.
